The Mediterranean Diet is good for dieters who don’t want to feel deprived from the food that they love. Bread dipping is a good appetizer that fits right into the Mediterranean Diet. Its easier than you can imagine to make a bread dipping appetizer. You will need a dish some bread and some vinegar and olive oil. Always use fresh baked bread, serve it with some extra virgin olive oil and balsamic vinegar. Mix some herbs and spices for added flavor. You can find a variety of breads that are suitable for dipping at your local deli. Ask them for ciabatta, focaccia or sourdough. A nice freshly baked French baguette is best served while its still warm. This is wonderful on a cold winters night.

Will share one of my favorites for olive oil dipping. Here is a very good Oil Dip Recipe for Italian Bread

Ingredients:
1 tablespoon minced fresh basil
1 tablespoon minced fresh parsley, use Italian
1 tablespoon fresh pressed garlic, usually 2 cloves
1 teaspoon thyme
1 teaspoon oregano
1 teaspoon fresh ground black pepper
1/2 teaspoon minced fresh rosemary
1/2 teaspoon sea salt
1/4 teaspoon crushed red pepper flakes
1/2 cup extra virgin olive oil
1/8 teaspoon fresh lemon juice

Method:
To make bread the dipping appetizer, combine all the above ingredients together except oil and lemon juice. Put in a blender or food processor. Chop on low speed until well diced and blended together. Stir in extra virgin olive oil and fresh squeezed lemon juice.
To serve, combine about 1 1/2 teaspoons herb mixture to 3-4 tablespoons olive oil mixture on a small dish. Some folks like to whisk lightly together at this point.
Fresh baked bread works great, as well as lightly toasted bread. Dip sliced bread in mixture.

I like Parmesan cheese added to the olive oil as a bread dipping dish appetizer. Our guest were overwelmed with favorable comments. The bread dipping dish recipe I like the most includes garlic, sundried tomatoes and Parmesan cheese (sea salt to taste)! You can add crushed red peppers to "kick it up a notch"!

Bread dipping is a favorite in Spain. Some of us use a pinch of sea salt with cold pressed olive oil. You can add a shot of lemon juice as well with fresh ground pepper.
Another way to enjoy bread dipping is to use a good sourdough bread, home-made or from the deli. Make sure it is nice and hot out of the oven. Take your favorite herbs like: basil, sage, rosemary, grind them all with a bit of pepper. For a great infusion of flavor put your bread dipping herbs, with a small amount of olive oil in the microwave just for 10 seconds or so. You will not believe the extra boost this makes for the flavor of the bread dipping herbs. Enjoy!

I have to admit, I was getting sick of the carrot stick and dip routine that most of us (me included) use for an appetizer whenever guests are over.
After reading this article, I decided to hunt out something I could use as a bread dipping dish, and tried this with the kids as an after school snack. I was surprised at what a hit it was.
I'd never even thought to use bread as an appetizer before, and can now see how effective different tasting breads can be.
As suggested, I used extra virgin olive oil for the oil dipping, and was blown away by the flavor it produced.
Next weekend I am trying this new discovery of oil dipping with my friends when they come over for dinner.
