The process of slow fermentation over years brings about a mellow flavor. This process involves aging in a “batteria,” or a group of progressively smaller wood barrels casks. The Modena balsamico traditionale process creates a balsamico vinegar with a pleasing balance of sweet and sour delicate taste.
