Mayonnaise is one of the most broadly used sauces, which includes versions made with garlic, green herbs, and even other specialties like fish soups. When made right by first adding a drizzle of olive oil, it should keep well in the refrigerator for days when stored in a container that is air tight.
- Two egg yolks
- One cup extra virgin olive oil
- One half teaspoon mild mustard
- Two tablespoons lemon juice
- One teaspoon sea salt
Mix the lemon juice, mustard, eggs, and salt in a blender and then while it is still running, drizzle a gradual amount of olive oil in and then stop after the sauce seems thick.
