Maple Balsamic Vinaigrette from Vermont

Balsamic Vinaigrette with Maple Flavor

Vinaigrette Recipe Ingredients:

3 large shallots, cleaned and peeled
1 teaspoon gourmet style Dijon mustard
1 cup aged balsamic vinegar
1/4 cup maple sugar
2 cups canola oil
salt and ground pepper to taste

Combine shallots and mustard in a food processor and chop shallots until fine. Add aged balsamic vinegar and maple sugar to shallot mixture and turn on food processor. Add oil to processor by drizzling the oil slowly until mixture is emulsified. Add salt and fresh ground pepper to taste.

Walnut Dressing over Blue Cheese Salad

Appetizers for four


1 head of Bibb lettuce
2/3 cup crumbled Roquefort or Blue Cheese
6 strips of crispy bacon, cooked well and chopped
1 ripe Hass avocado, sliced
Walnut Dressing (see recipe below)

Toss lettuce in enough vinaigrette to lightly coat the leaves.
Place the lettuce in individual serving bowls, then top with blue cheese, bacon, and avocado.
Drizzle more dressing over top, and serve.

Serving Suggestions:
Serve with Grilled New York Strip Steaks and Caramelized Onions

Walnut Dressing:

2 tbsp walnut oil
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
Whisk together with walnuts, finely chopped

Simple Aged Balsamic Vinaigrette Recipe

Recipe Ingredients:

1 tbsp Dijon-style mustard
1/4 cup Balsamic vinegar
2 tbsp Water
2 tbsp Fresh lemon juice
1/4 tsp Dried leaf tarragon
1 cl Garlic, minced
2 tbsp Safflower oil
2 tbsp Virgin olive oil
Salt & pepper to taste

Recipe Instructions:

In a jar, combine the mustard, vinegar, water, lemon juice, tarragonand garlic. Shake well to combine. Add oils and shake again.Season with salt and pepper. Chili before serving. Makes about 3/4cup. 12 servings(1-tb each).

Balsamic Salad Dressing

oil and vinegar setA balsamic salad dressing is easy to make healthy for you as well. Toss this dressing with cole slaw, greens or sliced tomatoes and mozzarella cheese.

Prep. time: 5 minutes Serves: 4

1/4 cup aged balsamic vinegar
1/2 teaspoon salt
fresh ground black pepper, to taste
1 teaspoon Dijon mustard
1 cup extra virgin olive oil

In a medium-sized bowl, whisk together all ingredients. Keep in refrigerator until ready for use.

Balsamic Vinaigrette

oil and vinegarBalsamic Vinaigrette Recipe, quick and easy. Be sure to use quality ingredients, they are what makes a good tasting vinaigrette dressing.


1 clove minced Garlic
1 T Honey
1 T Dijon Mustard
1 T Lemon Juice
1 tsp Soy Sauce
1 1/2 T aged Balsamic Vinegar
1/2 tsp Black Pepper
1/2 Cup Extra Virgin Olive Oil

Place all ingredients except oil in blender and mix on high until incorporated. Then add olive oil one tablespoon at a time, whisking together thoroughly. Use within a day or so.

Refrigerate if needed until use.
