Recipe from Executive Chef, Johnny DeVivo

Gourmet Green olives and roasted Pepper sauce

Ingredients:

7- green olives slivered
Sprinkle of cracked peppercorns
1- Roasted red peppers diced ¼ inc
4- Garlic Cloves confit sliced ¼ inc
8- Chives finely sliced
3- Sprigs Tarragon Picked
2- Tablespoons Balsamic reduction Sea salt
Olive oil

Preparation:

To make Balsamic Reduction- Use two cups Balsamic vinegar & reduce by half or until syrup consistency Garlic Confit- Slice four cloves of garlic ¼ inch thick & submerge in olive oil (just until covered), place on the stove over low heat until oil begins to slowly come to a boil & place the oil & the pot in the refrigerator until cool

Roasted Red Pepper- Coat the pepper in olive oil & place on a hot grill until all sides are black, place the pepper in a paper bag for five minutes and then remove the skin & discard the seeds

To Finish, place all the ingredients in a medium bowl & whisk together. Add sea salt. Place sauce over cooked product & finish with chives (use the garlic oil for the sauce)

This dish goes well with grilled pork, roasted halibut, or grilled chicken

Campanello’s Italian Restaurant, Cincinnati

Campanello’s Italian Restaurant is considered the most popular Italian restaurant in Cincinnati Ohio. A local landmark, Campanello’s is well known in the Tri-state area for it’s gourmet cuisine of homemade lasagna and imported pastas.


In 1906, Joseph Campanello came to Cincinnati from Bari, Italy. He made his home in the building which the restaurant is in today. He ran a small Italian import deli out of the downstairs of the house. In 1922, in this same house, his wife gave birth to Daniel “Danny” Campanello. In the late 1960’s, Danny opened a restaurant using the same old family recipes that his mother and father brought with them from Italy many decades before.

Ralph’s Italian Restaurant, in Philadelphia PA.

Ralph’s Italian Restaurant in Philly, has become a celebrity eating destination for decades. Legend has it that President Theodore Roosevelt was a Ralph’s Restaurant customer back at the turn of the century. President Roosevelt may have been the first celebrity to grace the restaurant, but he certainly wasn’t the last. Guest include the likes of Frank Sinatra to Dom DeLuise.

Ralph’s family owned and operated restaurant has been in business since 1900. Over four generations the same family has owned and operated this Philadelphia restaurant. One hundred years later, they still work as hard as Francesco Dispigno and his son Ralph to maintain the tradition that has been built for almost a century. According to the Dispigno family they are the oldest family owned Italian restaurant in the country. Every Italian food dish is made to order with the fresh ingredients from recipes that have been passed down from one generation to another.

Ralph’s won three awards at the Atlantic City Gourmet Cooking and Food Show. Other accolades include 100 years and 100 recipes Jimmy Rubino, Jr. has appeared on CN8’s “Lets Cook with Paul Dillon” as well as on QVC on the “Jammin in the Kitchen With Steve Bryant”.
