The ideal oil and vinegar cruet will also double as a drizzle cruet. If you have ever picked up an oil and vinegar cruet that was slippery from drips down the sides making it difficult to hold, easily tipped over and unattractive in appearance, you have probably been using one of the inexpensive bottles found in convenience and grocery stores. Often they are just the simplest of designs, a rubber or chrome spout dispensing which are not very effective for the olive oil inside. You should especially not be using a matching pair of this type of oil and vinegar cruet to dispense vinegar as well as oil. Spouts made from anything other than ceramic or stainless steel will become corroded from extended exposure to vinegar, … another unattractive table presentation to avoid.

It is very important that olive oil be stored in a different manner than it is dispensed. Large, clear bottles with spouts are ineffective for storage as they do not protect the contents from light and air. You will usually find that the manufacturer has used dark colored bottles to shield the precious oil from ultraviolet light, and provided cork stoppers or reusable caps to seal the bottle once it has been opened.

As effective a means of storage as the darkened, air-tight bottle provides, it is not the best means for dispensing the oil at the dinner table. For normal table use, it is recommended you use a decanting oil and vinegar cruet, which is the most durable and practical. Add a smaller quantity of oil (6 to 8 ounces) to the bottle. You will have to refill it more often, but that will guarantee that the oil is always fresh and the delicate flavor is preserved.
